I am always on the hunt for a good snack to tie me over between meals. I tend to eat really lite for breakfast and lunch, so I find myself snacking throughout the day. So many things I choose to snack on don’t really fill me up, though.
I had seen a few recipes on Pinterest for these “No Bake Energy Bites,” but I didn’t think I would really like them since I am not big on peanut butter. I was totally wrong! I tried these for the first time a few months ago and they are incredible and super filling.
I made them again this week to have as a snack, so I thought I would share the recipe I use.
- 1/2 dark chocolate chips
- 1 cup dry oatmeal
- 1/2 cup peanut butter
- 1/2 cup ground flaxseed
- 1/3 cup honey
- 2 Tbsp. chia seeds
- 1 tsp vanilla extract
- Mix all ingredients together thoroughly.
- Place in refrigerator to chill for 1 hour.
- Once chilled, form the “dough” into balls (about 1 inch in thickness)
- Place back in refrigerator once all balls are formed.
This is so easy and takes no time at all. The best part is that these are ingredients you probably already have on-hand at home!
Let me know what y’all think of these! Again, they are GREAT to have on-hand throughout the week as snacks.
