Grilled Chicken with Pesto

Ingredients
  

Pesto Ingredients
  • 3 cups packed basil leaves
  • 5 cloves garlic
  • ¼ cup pine nuts
  • ¼ cup Pecorino Romano
  • ¼ cup Parmigiano Reggiano
  • ¼ cup olive oil
  • 1 tsp salt
Grilled Chicken
  • 4 chicken breasts
  • 1 T olive oil
  • 1 T garlic salt

Method
 

Making the Pesto
  1. Blend all ingredients together in a food processor until smooth.
  2. Add extra olive oil if the mixture is too dry. Keep adding more until you get the right consistency.
Grilled Chicken
  1. Hammer out the chicken breasts to make them a consistent thickness.
  2. Brush each chicken breast with olive oil and then top with a little garlic salt.
  3. Grill at 350°F for about 20 minutes (flipping once) until the chicken reaches an internal temperature of 165°F.
  4. Once the chicken is done cooking, let it rest for a couple minutes before topping it with the pesto.
